A short note on Iraqi cooking.
Pimento and saffron, not curry powder
Iraqi spice work is delicate. Cardamom, dried lime, sumac, baharat. The flavors are warm and layered, not sharp. People expecting heavy heat are pleasantly surprised.
The bread is the centerpiece
Saj bread, hand-baked thin, served warm at every meal. Tear off a piece, scoop the mezze, repeat. The bread is what holds the meal together.
Quzi is the celebration dish
Slow-roasted lamb on saffron rice with raisins and almonds. Served at weddings, holidays, milestone dinners. We make it every day. It is also good on a Tuesday.
