The cool half of an Indian street stall. Pani puri, the crisp shells you fill with tamarind water and pop whole into your mouth. Cold yogurt lassis, sweet or salted. Frozen kulfi pulled off a stick.
Garam. (Hot.)
The fried half. Pakora dropped into hot oil, samosas straight off the rack, kati rolls griddled on a tawa and wrapped in roti. Chutneys on the side, herbs and onion to top.
Both at once.
Indian street food works on the contrast. Cold-spiced yogurt poured over hot-fried potato. Crisp puris loaded with cool chickpea. Sweet, sour, hot, cold all at once. The chaat section of the menu is where that gets formal.
