King's BBQ is a Cantonese roast counter on Adelaide Street North. Char siu lacquered red, whole ducks turning amber, soy chicken cooled and ready. Hung in the window all day. Sliced when you order.

The Three Roasts

Char siu. Roast duck.
Soy chicken.

Three Cantonese classics, done properly. Pork shoulder lacquered with maltose and rose wine. Whole ducks brushed with vinegar-honey, roasted in a hot oven. Free-range chicken poached in master soy stock cooled and chopped.

叉燒

Char Siu

Pork shoulder, marinated in maltose, hoisin, rose wine. Lacquered red, hung over fire. Sliced thin onto rice.

燒鴨

Roast Duck

Whole duck, vinegar-honey on the skin, roasted upright. Crisp skin, juicy meat. Half or quarter portions.

豉油雞

Soy Chicken

Free-range, poached in a master soy stock. Cooled, chopped on the bone. Served with ginger-scallion oil.
